Guacamole

• 1 shallot, minced
• 4 ripe avocados, skinned & pitted
• 2 plum tomatoes, diced
• 3 cloves garlic, minced
• 1 tsp sea salt
• 1-2 Tbs chopped cilantro
• 1 jalapeno, finely chopped
• Juice of a lime

In a medium bowl, toss all the ingredients. Mix gently so to retain some texture. Serve with flax-seed crackers.
